Simple to make, this soup is incredibly comforting on a cold day, and pairs wonderfully with crusty baguette and a side salad.
In a medium soup pot, heat olive oil then add onion. Sauté for 5-10 minutes until softened then add garlic. Sauté for 1-2 minutes until golden. Add remaining ingredients. Simmer for 10-15 minutes until flavours combine and greens are tender.
